Ingredients You’ll Need
For the Dough:

Step-by-Step Directions
1. Activate the Yeast
Mix yeast, 1 tablespoon of sugar, and warm milk in a small bowl. Let it rest for 10–15 minutes until foamy.
(If using instant yeast, skip this step and add it directly to the dry ingredients.)
2. Create the Psyllium Gel
In another bowl, whisk psyllium husk with warm water. Within a minute, it will thicken into a gel that helps your rolls hold shape and moisture.
3. Mix the Dry Ingredients
In the bowl of a stand mixer, combine tapioca starch, millet flour, sorghum flour, xanthan gum, baking powder, salt, and the remaining sugar.
4. Combine Everything
Add in your egg, melted butter, yeast mixture, and psyllium gel. Knead until smooth and elastic—about 5 minutes by mixer or 8–10 minutes by hand.
If the dough feels too sticky, refrigerate for an hour to let it firm up.
5. Shape and Proof
Divide dough into 9 equal pieces (about 76g each). Shape each into a smooth ball and place them in a lightly greased or parchment-lined 8-inch pan.
Cover and let rise in a warm spot (around 79°F) for 1 hour or until nearly doubled.
6. Bake to Golden Perfection
Brush with egg wash and bake at 375°F for 20–22 minutes, or until beautifully golden.
Brush hot rolls with melted butter as soon as they come out of the oven for that signature soft, glossy finish.

Store leftovers in an airtight container for up to 3 days. Reheat in the microwave for 20 seconds or in the oven for a few minutes to restore that fresh-baked magic.
